About Us
Our winery was founded in October 2018. We have 8 acres of carefully cultivated vineyards, which form the heart of our production and reflect our philosophy: authenticity, quality, and respect for nature and the local traditions.
Production is carried out entirely by hand, just as it was done in earlier times.
Each grape is hand-selected and crushed manually to preserve the fruit’s character and aroma — no mechanical intervention touches the juice.
After alcoholic and malolactic fermentation, the wines mature in French oak barrels for 12–15 months, developing complexity, body, and harmony. They then age for at least 5 years in our temperature-controlled cellar at 12°C, where the wine breathes slowly, gaining depth and expressiveness.
Falcon Nest Winery is the only winery in Cyprus that produces wine entirely by hand — a rare craft that unites tradition with authenticity.
Our awards at the international “Oinorama” competition in Thessaloniki, with gold and silver medals, confirm our dedication and passion for excellence.
